Berry Pie Recipe

Strawberries and rhubarb go hand in hand, this berry pie recipe delivers sweet and savory flavors to all berry pie lovers.

Ingredients:

  • 4 cups rhubarb, chopped

  • 2 cups strawberries, sliced

  • 1 1/3 cups granulated sugar

  • 1/4 cup cornstarch

  • 1 tablespoon lemon juice

  • 1/4 teaspoon cinnamon

  • pastry for a double-crust 9-inch pie

  • 1 egg, beaten for glaze

  • sugar (optional)

Directions:

  1. In a large bowl, combine strawberries, rhubarb, sugar, cornstarch, cinnamon and lemon juice.

  2. Roll out half of the pastry on a floured cutting board and line a 9-inch pie plate with the dough

  3. Gently spoon in filling

  4. Roll out pastry dough for top curst, using a knife cut dough into 1-inch wide strips

  5. Lightly brush pastry rim with some of the beaten egg

  6. Carefully weave strips over the pie, forming a lattice. Trip off excess dough from the edge

  7. Bruce lattice with some beaten egg and finish by sprinkling top with sugar

  8. Bake on a baking sheet in 425 degrees for 15 minutes, then reduce heat to 375 and continue baking for 50-60 minutes or until rhubarb is tender and crust is golden. Let cool for 15-20 minutes before enjoying!

 

Key Lime Pie Recipe

Key lime pie is a great summer pie recipe that offers a cool and refreshing filling.  On a hot summer day avoid turning on the oven and use store bought graham cracker crusted. For a healthier option you can use fat-free whipped cream as a topping instead of meringue.

For the filling:

  • 1 can (14-ounces) nonfat sweetened condensed milk

  • 2/3 cup low-fat plain yogurt

  • 2 teaspoons freshly grated lime zest, preferably a key lime

  • 1/2 cup (4-5 limes) fresh lime juice, preferably a key lime

  • 2 tablespoons water

  • 1 1/2 teaspoons unflavored gelatin

For the meringue:

  • 2 tablespoons dried egg whites, reconstituted according to package directions

  • 1/4 teaspoon cream of tartar

  • 1/2 cup sugar

  • 1 teaspoon vanilla extract

  • Lime slices for garnish

Directions for filling:

  1. In a medium bowl whisk together: condensed milk, yogurt, lime zest, and juice.

  2. Stir water and gelatin in a small bowl and microwave, uncovered, on high until gelatin is completely dissolved but before liquid begins to boil.

  3. Stir gelatin mixture then whisk it into lime mixture. Set bowl over a larger bowl of ice water, stir occasionally until it begins to thicken- for about 15-20 minutes.

  4. Spread the filling equally out into the pie shell and refrigerate until set- between 4 hours and 1 day.

To prepare meringue and finish pie:

  1. Position oven rack about 6 inches below the broiler, preheat broiler.

  2. Beat egg whites and cream of tartar in a bowl with a mixer on medium until soft peaks form.

  3. Gradually add sugar. Continue mixing until egg whites are glossy and hold puff peaks then blend in vanilla.

  4. Decoratively swirl and spread meringue over top of pie. Broil pie until meringue top is lightly browned. 30 seconds-1 minute. Best served with a garnish of lime slices.

 

Peach Pie Recipe

Peach pie is a great way to enjoy a nice light dessert on a warm summer day. Add a dollop of whipped cream to further enjoy this peach pie recipe.

Ingredients:

  • 10 fresh peaches, pitted and sliced

  • 1/3 cup all-purpose flour

  • 1 cup white sugar

  • 1/4 cup butter

  • 1 recipe pastry for a 9 inch double crust pie

Directions:

  1. Mix flour, butter and sugar into a crumb-like stage

  2. Place one crust in bottom of a 9-inch lightly buttered pie plate.

  3. Line the shell with sliced peaches then sprinkle some of the butter mixture on top

  4. Layer the remainder of the peaches on top of the crumb mixture

  5. Top with a top layer pie crust or lattice strips of pie crust

  6. Bake at 350 degrees F for 45 minutes, make sure crust is golden brown

  7. Let pie cool and enjoy!
