Beef Wellington Recipe

Break tradition this year and try something besides turkey or ham for your Christmas dinner. Beef Wellington is an elegant and delicious meal to serve on your Christmas table. It goes well with all of the typical sides you might already be making, like potatoes and vegetable casserole.

Here's what you'll need:

  • 2 1/2 pounds beef tenderloin
  • 3 tablespoons butter, softened
  • 1 onion, finely chopped
  • 1/2 cup sliced fresh mushrooms
  • 2 ounces liver pate
  • salt and pepper to taste
  • 1 package frozen puff pastry, thawed
  • 1 egg
  • 1 can beef broth
  • 2 tablespoons red wine

Step 1: Preheat the oven to 425 degrees F. Place the beef in a small baking dish, then spread with 1 tablespoon of butter. Bake for 10 to 15 minutes. When browned, remove from the oven as well as the pan, and put it aside to cool completely. Save the juice from the pan for later.

Step 2: Saute onion and mushrooms in a skillet over medium heat for a few minutes. Then remove them from heat and allow them to cool.

Step 3: Combine the liver pate and 2 tablespoons of softened butter. If you'd like, season with salt and pepper. Then, spread the pate mixture over the beef. Top with sauteed onion and mushroom mixture.

Step 4: Take the puff pastry dough and roll it out (Hint: It helps if the surface you're working on is lightly floured). Place beef in the center of the rolled out dough. Fold up and seal the edges. Place beef in a 9x13 inch baking dish, cut a few slits in the top of the dough, and brush with egg yolk.

Step 5: Bake the beef at 450 degrees F for 10 minutes. Lower heat to 425 degrees F for the remaining 10 to 15 minutes. Keep an eye on the beef—you want to the pastry to be a rich, golden brown color. Once it's done, set aside and keep it warm.

Step 6: Now it's time to make the sauce with all of those juices that were previously set aside. Place all reserved juices in a small saucepan and cook over high heat. Add in beef stock and red wine and stir. Boil the mixture for 10 to 15 minutes, or until slightly reduced. Strain, put it into a gravy boat, and serve it with your Beef Wellington.
