Jalapeño Cream Cheese Poppers

Ingredients:

  • 12 ounces cream cheese, softened
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 tablespoon bacon bits
  • 12 ounces jalapeño peppers, tops cut off and seeded
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup dry bread crumbs
  • 2 quarts oil for frying

Mix the cream cheese, bacon bits, and shredded cheese together in a bowl and fill each jalapeno with the mixture. Pour the flour and milk into two separate bowls and dip each jalapeno first into the milk and then into the flour making sure they are fully coated. Set the peppers on a tray and allow to dry for about ten minutes. Then, dip the peppers in the milk and coat completely with breadcrumbs. Repeat this step if needed to ensure all surfaces of the poppers are covered in breadcrumbs. Heat the oil to 365 degrees F (180 degrees C) and fry the peppers for 2-3 minutes or until golden brown. Let them cool on a paper towel before serving.
